Bobby Flay’s Avocado Salad

It’s summertime and nothing satisfies the hunger while at the same time making us fill light like a nice summer salad. Food Network star and celebrity restaurateur Bobby Flay offers up this simple, yet elegant summer avocado salad for you to enjoy and wow your friends. Try it out!

Bobby Flay’s Tomato and Lime Avocado Salad
Serves 4


0.25 c. fresh lime juice
2 tbsp. rice wine vinegar
1 tbsp. honey
1 tbsp. cumin seeds
0.25 c. chopped fresh cilantro leaves
0.25 c. olive oil
0.25 c. canola oil
Salt and freshly ground pepper

4 large ripe tomatoes
2 large Hass avocados
1 large red onion,
2 c. arugula leaves
1 tsp. ground cumin
0.25 c. chopped fresh cilantro leaves


1- For the vinaigrette, whisk together the lime juice, vinegar, honey, cumin seeds and 1/4 cup chopped cilantro in a medium bowl. Gradually whisk in the oils until emulsified. (Do not use a blender for this.) Season with salt and pepper to taste. Set aside.
2- Gently mix the tomatoes, avocados, onion, arugula and half of the vinaigrette in a large bowl. Check for seasoning and add more dressing, if needed. Sprinkle the ground cumin and 1/4 cup chopped cilantro over the top and serve immediately.
