Judy Joo’s Avocado Toast
1 avocado, peeled, pit removed, and roughly chopped into 3cm dice
Juice of 1/4 lemon
1 tsp finely diced red chilies
1 sprig of mint, finely chopped
1 1/2 tbsp extra virgin olive oil
A few good pinches of sea salt
1 slice seeded multigrain bread, toasted
1 egg, poached
In a small bowl, mix together the avocado, lemon juice, chilies, mint, olive oil, and salt until the avocado is completely coated. Pile all of the avocado mix onto slice of toasted bread. Layer the poached egg on top of the avocado. Enjoy!
